Newbie here. Just aquired a couple of IGT machines. S+ and a S2000. Getting a third tomorrow. yes they are addicting and seem to be multiplying....
Question I have is, has anyone every come up with a checklist that can be used when buying a machine? For some one that knows very little about machines, what do I look for in a machine? Or what kind of flags would make me walk away from a machine? The two I have, have no problems or issues and work well.

Excessive rust in the lower area or other signs of water damage/being in a flood. Those machines can develop problems for years since the electrical connector contacts and even the wiring will just get worse.
If the machine is a main-stream brand like IGT or Bally you can probably get replacement parts for it when needed and you can find someone to help with repairs as time goes by. But if you buy a less popular machine there can be a lot less parts available and it will be harder finding someone familiar enough with it to help you with repairs.

Yep, abinet rust is good to watch out for. Check the boards for corrosion from moisture, especially salt water for machines that came off cruise ships. Check for wiring harness' that aren't bundeled due to service work, cosmetic damage, missing or broken buttons, discolored video if it's a video machine and anythi g else obvious. If it won't even turn on, be very suspect and shoot for a bargain
