Can you run BB3 games like Ironman (S85E-000-020) on a Bb2 that was converted to a BB3 having upper and lower 22" monitors?

You have to look at the cabinet type. If it has the dual 32 inch vertical screens, it will not run on a standard dual screen cabinet. There are basically 3 reasons a game won't run a dual screen bb3.
1. It is a WAP (wide area progressive), LAP (Local Area Progressive) game that requires a separate progressive controller setup or a connection to wms for the game to operate.
2. It is not a compatible cabinet, like the ones used in Clue, Beetle Juice, Willy Wonka Pure Imagination, Flintstones, etc.
3. The obvious, it is a BB2 or a BB1 game.

That sure helps a lot. Is there an easy way to tell if they are stand alone versions? Is there something on the game card?

Not sure if those tell if it's a Stand alone or not and I'm sure someone smarter than me knows.

A friend of mine got them as part of a bid at an auction but doesn't know what they work with. I thought if they would work on my machines I would buy them
