I have the opportunity to pick up a machine very cheap. Are these machine desirable or worth the time to mess with? How about parts?

I think it would depend on the condition of the machine and where you live. I have a Konami 3-reel Dragon Hurricane and love the machine. I live in Las Vegas, so the one time I've need a repair it was pretty easy. No cheap, but easy.
