After living here in Las Vegas for so long and seeing all of the gaming machines go coinless my wife and I really do not want to play with coins or tokens. I am not very good at soldering or reading electrical schematics. A big part of the problem is neuropathy in my hands and not having a steady hand like when I was younger, add to that poor eyesight. It is hard to think that I spent the last 20 something years of my working career as a computer tech / System Admin.
I do not have a Bill Validator on either machine, I have pretty much all of the coin parts for one and none for the other. If I could find ALL of the parts needed cheap enough I would go ahead and get them both working on coins / tokens or even paper money.
I remember reading that there is a way to bypass the coin in setup and use a push button to apply credits but have been unable to find the info again. I would really like to be able to do this without making any type of mods that require soldering the MPU Board or any other things that would cause damage to the machines.
I would also like to be able to bypass the door optics and have some type of a switch that I could flip to make the machine think open or closed.

I will start with the door optics as that is easy.
The door optics are integrated to the system security. They are not just a contact mechanism that you can run a wire and easily bypass.
In the early days of cheating people used shivs (long pieces of thin metal) commonly used for opening car doors to thwart buttons or other forms of physical contact in the door and of course to get by the lock. If you break the beam of light the system signals that the door is open and the candle flashes etc. I had actually read some place that a guy was interrupted while putting a sock over the candle. He claimed it was due to his epilepsy of course that story didn't hold water when they found the shiv down his coat arm. More sophisticated hacks included the use of a light pen to blind the optics making the door think it was closed when it was actually open. The PE+ uses a particular frequency of Infrared light so a light pen would actually make the system think the door is open.
To do what you want in this regards - simply remove the door optics from the door and the chassis and mate them elsewhere in a permanent fashion. Simply coupling them with a piece of electrical tape will suffice - the machine will then think the door is permanently closed. You can then cut one of the wires add a switch (perhaps drilling a hole on the side of the machine) and you have your on/off switch. What you can't do is remove the optics all together and just join the wires. If you want to make it look like the rest of the machine you could get another key switch - using the same key as the existing jackpot reset key.

Coinless
Bettor Slots has a home TITO board - but its not suitable for the PE+ or S+. You would need to step up to a Game King or Game Maker or other newer platform to use this.
Some people set their bill validators - using a set chip to 1c. They then use a dollar bill to add 100 credits. ($5 = 500, etc) You can still leave the coin system in place and the machine themed as 25c or dollars or whatever its already set for. You then set your hopper limit to 1 coin. So if someone hits a Royal flush for 4000 coins it pays out 1 coin then hangs until you clear with a reset key. Other people will set the hopper limit really high - so it almost never goes into a hand pay and they simply disconnect the cash out button (remove 1 wire) so you can't trigger a payout to the hopper.
The other coin-out hack is again low tech.
When the machine is paying out it basically runs the motor and as a coin passes through the hopper optics it is counted. If this is a 10 coin win, 10 coins pass and then the hopper brake kicks in stopping any more coins from falling. You can fake this by creating a cardboard disk with about 8 arms (think about a kid creating a cardboard sun) and use a small piece of double sided tape to attach it to the hopper wheel. As the arms pass through the optics it is counted as a coin.
If you read through the schmatics of the PE+ there is electronics to support a printer instead of a hopper. I have only heard of one person every having a printer - and they sadly were tearing it out to put in a coin system. All I can say is that even with a printer this would have been very pre-tito. You take the ticket to the cashier vs being able to re-insert into another machine.

I need to go pick up a new set of door optics for one of the machines in the morning and will give that a try tomorrow night if I have the time. I had so much more time to do things when I was still working 50 - 60 hours a week and raising kids.
While I am there I will see what parts they have hiding in the back for my machines. If I am lucky he will have what I need to at least have one machine complete as far as coins in and out and the other setup for a bill validator, if not both for bills.
I will try the hack for the hopper after I make sure that it is functional. I wish that I was better with soldering up stuff because I would love to try the virtual hopper mod that I found on here. I do plan to make the cash out non functional but easily made usable by either plugging it in or putting the switch back in place.
In the mean time I am watching for any other PE+ machines to pick up cheap for parts. Eventually I want to find a nice Game King and some of the video slots like CATS or Goldfish, my wife really likes machines like those.
I will let you know how this turns out as I get the parts to move forward.

A lot of the used dealers in vegas are not that consumer friendly. There is a version of the PE+ software floating around in the wild that allows you to key-on and key-off credits. I'm not sure if it was created by IGT, or by a third-party (my hunch is the latter). With that, you can run your machine without the need for coins.

Key On Credit:
If enabled in the self test mode, the machine attendant has the ability to increment the credit meter. Turning the jackpot reset key while the game is in the idle mode displays on–screen instructions for setting the credit meter. The maximum credits that may be added to the credit meter is set in the self test mode. If the key on credit option is enabled, the credit type cannot be Nevada noncredit. In addition, if the hopper is disabled, the credit type cannot be Euro noncredit. If both the coin acceptor and hopper are disabled, the game will not support Nevada credit, Nevada noncredit and Euro noncredit types. The credit type automatically defaults to Montana credit when this option is enabled, to prevent the old credit type from causing possible operational conflicts. The credit type may be changed to one of the remaining acceptable types provided there are no credits on the credit meter.
