I recently picked up a IGT S+ Double Jackpot. It has a DBV-145-SS ID 023 V3.20-11

I'm working on replacing the main board due to battery acid damage but, curious what bills this machine will accept and what options I may have to upgrade or improve the DBV. Where could I source the parts needed?

You could replace the head with a DBV-200.  It has 4 way acceptance and loaded with the last update for it will take everything except the new purple 5's and $100 bills.  Contact Jim at Midwest slots, he can probably help you out.  Other option is to go with a WBA, but that's a bit more work and money to buy/install.

I wasn't sure if I needed to swap power supply or transport. So just a head change?

Transport definitely not.  If the power supply has ventilation slots on the sides then it is fine too and all you would need to swap is the head.
