Title: Bally e2000 hopper voltage questions

Can I remover the hopper from the machine, disconnect the hopper control board and apply 120v directly to the hopper motor to make sure it's good?

Where should I have 120v for the hopper at the cabinet beau plug that the hopper plugs into?

Is the hopper relay located next to the hopper at the rear and what exactly does it do and how do I check it?

The hopper motor runs on 120VAC.
There is no hopper relay, it is turned on via a Triac on the hopper control board.
It is advised to unplug the hopper control board and apply 120VAC directly to the hopper motor contacts.
A simple, and dangerous way to get 120 VAC for the hopper motor, is to get a 2 wire extension cord and cut off the female end.
This is called a suicide cord.
Get a distribution module with multiple AC outlets and make sure it is turned off but plugged into the wall.
Use some alligator jumpers to connect the hopper motor terminals to the ends of the cut extension cord.
Turn on the power distribution unit to apply 120 VAC tot he hopper motor, turn it off and unplug it when the test is done.
