I live in southern CA and can't seem to locate any place that has cabinets for 8-liners, so I was thinking of just building one. Has anyone come across some DIY plans? Google has not been my friend on this quest.

You can modify an arcade or MAME cabinet design to use as an 8 liner or cherry master cabinet. Search Google using, "build arcade cabinet". You can also buy cabinet kits on Ebay. Search on Ebay using, "arcade cabinet kit"

I'm in GA, so most of my sources are in the southeast. Check out Gamebox cabinets or Fun Company. They both ship.
As far as cabinet designs, they are really simple and it's kind of up to you how you want to do it. Most of the ones we use are made from melanite (sp?) just a box with a monitor mounted in it, a button panel, and a BA. I can get pictures if you want.
