Will a Sevens UP S+ kit work on a S2000

I have as S2000 Diamond Fives and want to change it to a Sevens Up but the kit is for an S+ it has the eproms with it.  Will this work?

Yes it will work. You need a SB001000 in conjuction with the SS reel chip for the game. The SS chip needs to be 120ns or faster for a S2000.
Quality doesn't cost. It pays.

Also, sometimes the S-plus reel strips are just a little too wide for the s2000 reels (not always) . if they are you can trim them ever so slightly to make them work.

Is there an SB chip available for that game or was it only done for the S+ platform?

Sevens up, Leap Frog and Balloon bars were clones of each other SS3992 thru SS4001

There was a S2000 Vision SB chip for Balloon Bars, but that will not help here..
