You have to key chip to change anything in 7.x menu.  Send RB a PM for a keychip if you need one. 

Try hitting the cashout button about 5 times in a row or alternate from cashout to service a few times until it unlocks.

I already bought a clear and key chips from RB...
I went ahead and did a keychip on it and was able to disable the coinless mode and token payout, set hopper to 00000
Exited out, put a few bucks in, hit the cash out button and bingo, went to handpay, alarm went off and reset with one turn of the jp key...problem solved!!!
